Interns will isolate cold-tolerant bacteria from refrigerated food samples and characterize their growth kinetics, enzymatic activity, and spoilage mechanisms at sub-optimal temperatures. This involves culture techniques, biochemical testing, and molecular identification of psychrophilic and psychrotolerant pathogens responsible for food deterioration.
