Interns will monitor microbial population dynamics in food products containing additives over extended storage periods using culture-dependent and culture-independent methods. This includes tracking phenotypic and genotypic changes in surviving microorganisms, identifying sub-lethal injury responses, and predicting product safety throughout shelf life.
